When Mac arrives in California, without Mcqueen, a reporter asks if he's going to pose for "Cargirl," implying that adult magazines exist in the Cars universe.
Doc Hudson told Lightning McQueen that after he returned from his crash, they told him he was history. With Doc being a Hudson Hornet, this is true to the real car, because it had an 86% win ratio in the early 50's, but was left behind because it had an outdated flathead engine.
Mack puts "Jocko Flocko" on the side of his truck. Jocko Flock was a monkey used as a marketing stunt in auto racing in the 50s. He drove in Tim Flock's Fabulous Hudson Hornet.

An 'Apple car' can be seen in the race at the beginning of the movie. This is a tribute to the former CEO of Pixar, Steve Jobs. The number 84 is also significant and was chosen because it was the year the first Apple computers began selling.
The Lightyear tires used by the race cars are an obvious reference to Buzz Lightyear, the not so obvious detail is that they are listed as being from 'Sector 4, Gamma Quadrant' where Buzz said he stationed in the first Toy Story movie.

"Cars" (2006), Strip "The King" Weathers crashes due to his lack of roof flaps. Roof flaps function as an emergency spoiler when going backwards, counteracting the lift produced by the rear spoiler. Lightning McQueen has these roof flaps, which allows him to drive backwards in the same race.
The minivan that passes Mac on the highway has its left turn blinker on as it gets into the right lane
